Since the 11th century, the Mas du Novi produces quality wines, on the last foothill of the Cevennes, in front of the Mediterranean Sean, peaking at 150 meters. The domain is composed of 42 hectares of vines cultivated organically. The vineyard is bordered by 60 hectares of wood and garrigue.

• Terroir: Each hectare has 4 000 plants. The soil is composed of sandstone.
   
• Wine-making: A traditional method is used to produce the Merlot de Novi. This organic wine ferments and ages inside stainless steel tanks.
